Moldy Mice Cookies

These are soooo easy and everyone loves them. This is mostly what I carry to office parties. ENJOY!!!
Editor's Note: Similar to wedding cookies it's their mouse-like shape that give them their strange name. Call them whatever you may, these sweet nut cookies are quite tasty! This recipe makes about 18 cookies. I doubled the recipe and made 3 dozen. I was able to fit 18 on each tray just perfectly. Two cookies broke in half when I was flopping them around in the confectioners' sugar. I don't believe they are too delicate, but I guess just a bit. Not to worry. I took care of them. ;o)
Ingredients:
1/2 c. butter (1 stick)
1/2 c. chopped pecans
1 T. sugar
1 1/2 tsp. vanilla
1 c. all-purpose flour
Sifted powdered (confectioner's) sugar, or unsifted (about 1-2 c.)
Instructions:
Cream butter and tablespoon of sugar.
Add flour, pecans and vanilla.
Work dough into ball, with hands.
Roll into small bars about the size of your thumb.
Editor's Note: When I made these I started out by taking a small spoonful of dough to form each cookie. After just a few I put the spoon down and just pinched off a bit of dough as needed. Some were smaller, some bigger like this one (photo above). They all baked up just fine. They do spread a little when baking, but not too much. When you roll the dough in the palm of your hands, they naturally take on the shape of a mouse, hence the name... Moldy Mice Cookies. :o)
Bake at 425 degrees for about 10-12 minutes.
When done roll immediately in powdered sugar. Use a spatula to move from pan to sugar.
