Grandma's Date Pinwheel Cookies

Ingredients:
2 1/4 c. chopped dates
1 c. white sugar
1 c. water
1 c. ground nuts
1 c. shortening
2 c. brown sugar
3 eggs, well beaten
4 c. flour
1/2 tsp. salt
1/2 tsp. baking soda
Directions:
Combine dates, white sugar and water. Cook over low heat until thick, about 10 minutes. Stir in ground nuts and cool.
Cream shortening and brown sugar. Gradually add well-beaten eggs. Stir in flour, salt and baking soda. Refrigerate for 1 hour. Divide into 2 or 3 parts. Roll out separately into rectangles a scant 1/4-inch thick. Spread each rectangle with date nut mixture. Roll up as for jelly roll. Wrap each roll in waxed paper and chill overnight. Slice and bake at 400 degrees for 10 to 12 minutes.
